I absolutely love fried rice, especially when we go out to dinner and the hibachi chefs cook the meal right in front of us. It’s such a fun experience and the food is always delicious.
We started making fried rice at home on the stovetop years ago, but once we got a Blackstone griddle we really took it up a notch.
Cooking fried rice on the Blackstone is just so much fun. The cooking surface is huge which means you can cook enormous servings to feed the whole family. And you get to experiment with all sorts of ingredient options.
Plus you’ll look pretty cool and feel like a real hibachi chef!
What Is Fried Rice?
Fried rice is a traditionally Asian dish consisting of cooked rice that has been stir-fried in a wok or frying pan and mixed with other ingredients such as eggs, vegetables, meat, or seafood. It can be served as a main dish or as a side dish with other foods. Fried rice is an excellent pairing with my grilled salmon recipe!
How To Make Fried Rice On A Blackstone Griddle
For starters, you need to use pre-cooked rice that's completely cooled. If you happen to already have leftover rice in the fridge that works great. If not, you'll need to plan ahead of time.
Make a batch of rice on the stove or in a rice cooker, then spread it out on a baking sheet and pop it in the fridge for the rice to cool, preferably overnight.
How much rice do you need?
On average, you can expect people to eat between 1 and 1 ½ cups of rice. Each cup of uncooked rice will yield approximately 3 cups of cooked rice, so you should make one cup of rice for every two people. For example, if you're feeding a family of 6, you'll want to use 3 cups of dry rice, which will will yield about 9 cups once cooked.
Gather all of your ingredients (including the precooked rice) before you fire up the griddle, because once you get started this meal comes together in no time.

Preheat your griddle to a temp of about 350 F to 375 F. (I like to use a laser thermometer to make sure I've got the right temperature). Once the cooking surface is heated up add some cooking oil to the griddle and spread around with a spatula.
Add your vegetables on one side of the grill. Start with bigger veggies that take longer to cook and work down in size.
On the other side of the grill add cold rice that has already been cooked and cooled. Add sesame oil and soy sauce. You may need to add an additional small amount of oil or soy sauce as it cooks. Use your judgement and sense of taste.
As the rice cooks, use your spatula to create a hole in the middle of the rice. Drop a few tablespoons of butter in the hole and as it melts add a few minced garlic cloves. You'll want to cook the garlic for just a minute or so, until it becomes fragrant, and then mix it into the rice.
Add your veggies and toss into the rice until everything is mixed well.
Cook the beaten eggs on the griddle and use the spatula to scramble them. Then mix into the rice and continue cooking for a few minutes, until the rice gets crisped to your liking.
Remove everything from the griddle and serve warm, garnishing with some sliced green onions or sesame seeds.

Substitutions and Variations
I love this fried recipe because it comes together very fast, plus it's so customizable. You can mix and match whatever ingredients you have on hand and make this dish unique every time.
Here are a few suggestions:
- Add Protein: Slice steak or chicken into bite-sized pieces and then cook right on the griddle and mix into the fried rice. Shrimp, scallops, and tofu are other great options.
- Serve as a Side: I like to load my fried rice up with lots of ingredients and make a whole meal out of it. But you can also keep it very simple and serve as a side with some grilled salmon or chicken breast.
- Veggie-Friendly: Add your favorite veggies and other ingredients including broccoli, zucchini, pineapple, water chestnuts, baby corn, or sugar snap peas.
- Skip the Eggs: I love eggs in fried rice so I don't recommend it, but to each his own.
- Get Saucy: try different combinations of oyster sauce, sweet chili sauce, or my new favorite...Bachan's Japanese BBQ Sauce. I tried it in my fried rice recently and the whole family was blown away!

Easy Blackstone Fried Rice Recipe
Ingredients
- 6 cups rice precooked and cooled
- 1 tablespoon avocado oil
- 1 cup onions diced
- 1 cup frozen peas and carrots
- 3 tablespoons butter
- 1 tablespoon garlic minced
- ½ cup soy sauce
- 2 teaspoons sesame oil
- 3 eggs
- salt and pepper to taste
Instructions
- Cook rice according to package instructions. Spread rice on a baking sheet and place in the refrigerator until completely cool, preferably overnight.
- Preheat griddle on medium-low until it reaches about 350 F to 375 F.
- Add a tablespoon of avocado oil to the griddle and spread it around with your spatula. Add the diced onions and cook for about 3 to 5 minutes, or until they start to get tender. Add the peas and carrots and mix into the onions. Then push the vegetables to one side of the cooking surface.
- On the other side of the griddle, add the precooked rice and use the spatula to spread it around, leaving an open space in the middle.
- Add the butter and garlic to the space in the middle and let the garlic cook until it becomes fragrant (about 30 to 60 seconds).
- Add the soy sauce and sesame oil to the rice, then add the cooked vegetables to the rice. Add some salt and pepper to taste. Use your spatula to toss the rice until everything is well-mixed.
- Beat the eggs lightly and then cook on the griddle. Use a spatula to chop the eggs into bite-sized chunks and then mix into the rice.
- Continue cooking until the rice done to your liking. Be sure to taste your fried rice along the way and adjust soy sauce, salt, and pepper as needed. Remove from the griddle and serve while still warm. You can garnish with sesame seeds or some sliced green onion if you'd like.

Notes
- I like to use Jasmine rice for this recipe, but any kind of long grain rice will work.
- Make sure you're tasting along the way. Feel free to add some extra oil, soy sauce, salt pepper, garlic, etc. based on your own preferences.
- Mix in whatever veggies you have on hand, and add in some steak, chicken, shrimp, or tofu to get some extra protein.
