When my daughter was in kindergarten, she had a weekly assignment where she had to list 10 foods that start with a specific letter. Some letters were pretty easy, but some really threw us for a loop. When we got to letter U about the only food I could think of was Udon noodles, and we spent way too much time trying to find other foods that start with U.

Udon Noodles
Udon is a thick, wheat flour noodle used in Japanese cuisine. Udon noodles are often served in a hot soup or broth made from dashi, soy sauce and mirin.

Ugli Fruit
The Ugli fruit gets its name from its, shall we say, "lack of beauty." But don't let its outward appearance fool you. The ugli fruit may not look very appetizing but inside is a sweet and tangy citrus fruit that can be eaten raw, juiced, or mixed in salads.
Interestingly, the ugli fruit is a natural hybrid of grapefruit, orange, and tangerine. It was only discovered in the early 20th century in Jamaica and today it is still primarily grown there.
Uni - Sea Urchins
Uni is a Japanese delicacy, and it comes from the spikey sea urchin that live on the ocean floor and in coral reefs. Sea urchins come from the same family as starfish, sea cucumbers, and sand dollars. Their spikes are inedible, and in fact the only part you can eat is the uni, or reproductive organs. Uni is often served in sushi and sashimi, or over rice or pasta.
Ube
Ube is a tasty purple yam native to Southeast Asia. Ube kind of looks like a potato on the outside, but inside its bright purple. It has a sweet and nutty flavor and is commonly used in Filipino desserts and snacks.
Upside Down Cake
You don't see upside down cake too often these days, but it was incredibly popular with older generations. Created in the 1920s, upside down cake was a staple of desserts in America.
Upside down cake is made by pouring cake batter over pineapple, butter, maraschino cherries, and brown sugar in a pan or skillet. You bake it in the oven and then flip it onto a platter so. The pineapples and cherries that were at the bottom of the pan are now on the top of the cake. In other words, it baked "upside down".
Ugali
Ugali is a thick, sticky porridge made from cornmeal or maize flour that is popular in many African countries.
Unagi
A prized ingredient in Japanese cuisine, Unagi is freshwater eel. Unagi is traditionally grilled over charcoal and served in a sweet and savory sauce made with soy sauce, sugar, and mirin (a Japanese rice wine used for cooking).
